These are in the front parking area..

This the the entrance and years ago people tied up their horses to the railing but this day the lady just brought her's up for every to pet..

This is a rustic little place and has been here for many years, they have capitalized on the western theme...

This is the bar area and notice the horns up top...Upstairs is offices.

Arizona 3

Oraibi, a Hopi Village located in in Navajo County, Arizona and is the oldest continuously inhabited community in the U.S. It is believed to have begun between 900 and 1000 A.D. and is located on Third Mesa on the Hopi Reservation. In the 1800s, droughts in the area drove many other Hopi settlements to consolidate with others for survival. By 1890, it’s believed that as much as one-half of the Hopi population resided in the tiny village of Oraibi (called Orayvi by inhabitants).

There are few pictures available today because The residents of Oraibi  ask that you respect their wishes of no photography within the village. You'll find a few craft stands where residents are selling their handcrafted dolls, baskets and pottery. And don't forget to sample their traditional piki bread if you go!

The Oraibi village  was constructed of mud and stone dwellings, clustered together, even stacked on top of one another. Stairs and, more often, ladders were used to gain access to the upper floors.  The estimated population in 1890, the time period in which the following photo was taken, was 900 residents.

Cooking Tidbits

Cooking for one or two always interests me, not only because that is what I do but because I often think of Seniors who cook just for them selves and how hard that would be so when I can learn things that help I get pretty excited. One such thing recently is that you can freeze cheese! I use up cheddar cheese fast enough but fresh Parmesan Cheese not so much.

I learned you can shred fresh Parmesan cheese and put it in small bags and then put all the small bags in a freezer bag. I am going to give it a try.

Thought I would share a few pictures around home...everything is in bloom right now.

Our circular drive. The wall of white flowers are Oleanders and they grow year round.
This plant is called "Cat's claw" because it has these little claw like feet on the vine that allows it to climb any and everywhere.

 Every spring they bloom these yellow flowers...

This is the east side of my house

It is amazing how something so lush can grow in this heat!

Arizona 2

Phoenix

Also known as the valley of the Sun.

Phoenix originated in 1866 as a hay camp to supply military post Camp McDowell; prior to that the area was inhabited by Indians who also created water canals to try to survive the drought. Water being brought into this desert is why this city has not only survived but has become the capital with over 1,626,078 people. The "Five C's" Cotton, cattle, citrus, climate and copper were known as it's main economy until after World War II, when high-tec companies began to move into the valley and air conditioning made it's hot summers more bearable.  No hurricanes, no tornado's to speak of and no earthquakes. Our peril is sand storms and that might seem minimal but they can be deadly...here is a picture of one coming into the valley.

I have lived here for nearly 52 years and the growth is on going. I never thought I would live in a big city but truthfully you only stay in your small area most of the time so it does't really seem that big until you have to make a run to the airport or some other place you only go on occasion and then you see all the changes, some good and some not.

Tuesday night dinner

I served this very dinner before...

And the recipe for the Cod can be found under "Cod" on my site but what was different is the fresh spinach. I have always eaten spinach from a can and started to wonder what is was like to cook it fresh. I settled on a simple recipe:
Garlic Butter Spinach
2 tbsl butter
1 clove garlic minced
1/4 tsp salt
1/8 tsp pepper
1 pkg. spinach.
Combine the first four ingredients in a 2 quart micro safe dish and melt butter. Add Spinach and cook on high 2 min. or until spinach melts. Sprinkle with Parmesan cheese.

Anyone else have a recipe for spinach? I loved it.

Recipe

7 Can Chicken Taco Soup

1 can black beans drained and rinsed
1 can pinto beans, drained and rinsed
1 can petite diced tomatoes, not drained
1 can sweet corn, drained
1 can (12.5oz) chicken breast drained & flaked
1 can (10 oz.) green enchilada sauce
1 can (14 oz.) chicken broth
1 packet taco seasoning
1/2 tsp. cumin
1/2 tsp chili powder
1/2 tsp garlic powder

Combine all ingredients into a large soup pot and bring to a boil. Reduce heat to low and simmer 20 - 30 min.  Stirring occasionally.
Serve with shredded cheese on top and either crackers or tortilla chips

There are many interesting places in Arizona and probably the most famous is the Grand Canyon

Here are a few tidbits...
You could pile four 1,300-foot skyscrapers on the top of each other and they still would not reach the rim.

Because elevation changes weather, the canyon itself created it's own weather.

We can enjoy the Grand Canyon today thanks to Teddy Roosevelt who first visited it in 1903 and was deeply moved by it. In 1906 Roosevelt signed a bill that proclaimed the area the Grand Canyon Game Reserve, and two years later, he made it a nation monument. Of the Grand Canyon, he said "Leave it as it is. You cannot improve on it. The ages have been at work on it and man can only mar it.

Sunday Jaunt

I have mentioned before that when the occasion comes that both hubby and I are off from interpreting at church we take a little Sunday jaunt and this past Sunday was one of those times. We went to breakfast here

They have the very best breakfast ever and I will show you more pictures of this place another time because this is also our normal Monday and Friday night place.

We took a long drive up to Camp Verde and the vegetation never dissapoints....from hills

Tuesday night dinner

I have been pretty quiet on my dinners, mostly because for one reason or another I haven't cooked on my Tuesday but this week I did. I don't have a recipe to share but a great tidbit. I fixed baked pork chops with stuffing and the thing that made it different is that the dressing was made with applesauce as well as butter and water but also with raisins and I must say it was very good but what was great was my little side idea. I bought a package of those pre-made jello's and this...

Mixed them together and it was ever so tasty!

A record

If you have been watching the news you know that we here in Arizona are experiencing some unusual  weather. In fact the Phoenix area shattered a 122 year old record. I think it might have been on Thursday night when hubby and I came home and I asked him to start a fire. Most unusual in late Feb. for sure!
