The artichoke is actually the bud of a thistle—a flower. The leaves (called “bracts”) cover a fuzzy center called the “choke”, which sits on top of a meaty core, called the “heart”. The heart is completely edible (and amazingly delicious). The end of the bracts are edible as well and some people like them dipped in butter, I like them dipped in mayonnaise.

I never knew this. How lovely to see them with such lovely flowers.
I have only had an artichoke once or twice in my whole life! I need to fix one.....I’ve never prepared them myself before!
