A-Z Chalenge Recipes Letter M

Mexican cornbread

 
2 eggs                                                            1 cup cornmeal
 
1 cup creamed corn                                       1 1/2 tsp. salt
 
3 tsp. baking powder                                     1 cup shredded long horn cheese
 
1 cup cottage cheese                                     1 sm. can diced green chilies
 
2/3 cup oil
 
Combine all above except the green chili and cheese.
 
Place half the mixture in a buttered pan, then layer green chili and cheese and then place the other half of mixture on top.
 
Bake at 350 for 35 min.   
 
Note: keep refrigerated.

I love cornbread, but prefer it plain.

some corn bread is so dry, reading these ingredients, i don't think this would be. great ingredients and i like the way it's layered!!!
