A-Z Challenge Recipes letter Z

Zippy Zucchini

4 cups zucchini cut into chunks (about 2)                 1/2 onion, sliced thin
4 eggs, beaten                                                            1 jar pimiento, drained
1/2 tsp. salt                                                                 1/8 tsp. pepper

Place zucchini and onion in a 10x6 dish; cover and microwave on high for 7 min. drain.
In a bowl mix together all other ingredients and pour over the zucchini. Mix well and cover with a paper towel. Microwave for 8-10 min. Stir and cook for another 4 min. or until the center is set.

Microwave-Baked SWEET POTATO WITH ALMOND BUTTER AND CINNAMON (#7 in list) --------   I know this sounds odd, but trust me on this one; nut butter with sweet potatoes is a winning combo for both your body and your taste buds. Microwave your sweet potato the night before, and in the morning, split it down the center with a knife, stuff with almond butter, and add touch of cinnamon. Season the steaks with salt and pepper to taste. Place into a glass dish, and drizzle with Worcestershire sauce. Turn the steaks, cover, and refrigerate 15 minutes. Turn the steaks again, and marinate 15 minutes longer.
Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
Grill for about  7 minutes. Toss the asparagus spears with a little olive oil, and season with salt and pepper to taste. Place the asparagus onto the grill, turn steaks over, and close lid. Cook until the steaks are beginning to firm and are slightly pink in the center, and the asparagus is tender, about 7 additional minutes. Turn the asparagus halfway through. Top each steak with 3 asparagus spears and swiss cheese. Continue cooking until the cheese has melted. Remove from the grill, and let stand 5 minutes before serving.
Note: could broil as well if you don't grill.

White Sauce

2 Tbl. butter                                                  2 Tbl. flour
1 cup milk                                                     1/4 tsp. salt
1/4 tsp. pepper

Melt butter in pan, blend in flour. Stir in milk and continue to cook and stir until thickened.

For cheese sauce add 1/2 cup cheese of choice and stir well.

Note: When hubby and I were first married he always talked about his mom making biscuits and gravy and I couldn't figure out how to make the gravy. One day I made this white sauce for some thing else and he declared that was the gravy!

Vegetable Medley

1 can golden mushroom garlic soup                                         2 cups broccoli separated
1/2 soup can of milk                                                                  1/2 cup long horn shredded cheese
2 carrots sliced                                                                          Salt and pepper to taste
1/2 fresh cauliflower separated                                                 Few frozen peas
1 can sliced new potatoes (drained)                                          Sm jar of mushrooms (drained)
 
Cook carrots and cauliflower in desired dish in microwave and cook till tender. Can put in refrigerator until ready to assembly casserole. Mix soup and milk and pour of top of cooked veg. Sprinkle peas over top. Drain can pot. and mushrooms layer on top and then sprinkle with salt and pepper and top with cheese. Bake at 350 for 30 min or until bubbly.

Pinapple upside down cake

 
Pillsbury yellow cake mix mixed as directed.
Lg. can crushed pinapple (drained)
 
Preheat over at 350
 
Melt 1 stick of butter in cake pan. Add about 1 1/2 cups brown sugar (or until the butter is sopped up)

Place pinapples on brown sugar mixture and pour cake mix over the top. Bake 40-45 min. Turn out upside down on platter and cool.

Tuna Casserole

2 1/2 Tbl. butter                                              1 1/2 Tbl. corn starch
1/4 tsp. salt                                                      dash of pepper
1 1/2 cup milk                                                 chopped onion
1 7 oz. can tuna (drained)                                1/2 Pkg. 8 oz macaroni (cooked)
1/2 pkg frozen peas (thawed and cooked)       1/2 cup shredded Cheddar cheese
 
In pan, melt butter stir in corn starch salt and pepper. Add milk and cook till thickened. Add all other ingredients and pout into a greased casserole dish. Bake at 350 for 25 min.

Steak Diane

 
1# round steak                                                     2 green onions, chopped
Instant meat tenderizer                                        1 tsp. dry mustard
1 Tb. butter and oil                                              1 1/2 Tbl. lemon juice
1 3 oz. jar of mushrooms                                     1/4 tsp worchestershire sauce
(save juice)                                                           1/2 tsp. cornstarch
4 Tbl butter                                                           1/8 tsp. Kitchen Bouquet
Salt and pepper
 
Trim fat from meat, cut into serving pieces and tenderize. Sear pieces in hot skillet with oil and butter. Cook rare. Remove pieces to serving platter. Add remaining 4 tbs. butter and saved mushroom juice to drippings in the pan. Saute green onions. Combine all other ingredients in a small dish except the mushrooms and mix until smooth. Add to the sauted onions in pan and cook and stir until sauce thickens. Add the mushrooms and heat. Spoon over steak.
 
Serves 4

Ramen Noodle Coleslaw

 

1 head shredded cabbage                                   1 chopped shredded cooked chicken
 Shredded carrots                                                1 packet of ramen noodle                          
5 oz. toasted slivered                                          1 packet seasoning
1 bunch green onions                                          1/2 cup oil
1 pkg. chicken ramen noodles                             3 tbl. red wine vinegar
(uncooked and broken into small pieces)            3 tbl. sugar
 
Mix first six ingredients in a bowl. Mix the last four ingredients to make the dressing.
 
Note: be careful with the dressing it can quickly become too much.

Easy Quiche

 
1 C. bisquick
4 eggs
2 C. grated raw zucchini
1 C. cheese (1/2 each of jack and cheddar)
Salt and Pepper
 
Beat eggs slightly; add all other ingredients and blend well. Spray 10" pie dish with pam. Pour mixture in and bake at 325 for 35 min. or until firm.

Wash the pears and make the following sauce:
1/4 cup sour cream
2 tbl. honey
1 tsp. lime juice
dash of nutmeg
 
Arrange pear slices on a lettuce leaf, sprinkle with sliced almonds and then drizzle the sauce over.

Home Made Noodles

 
These are so easy to make and they taste so different than store bought!
 
1 egg                                               3 Tbl. cold water
 
Beat the above together with a fork. Add enough flour to make a really stiff dough that is no longer sticky. Roll out thin and let day (couple of hours). Then roll up jelly style and cut in strips. I usually double this recipe.
 
One way I like to eat this is to simmer a small pork roast or chicken with spices and then remove and shred the meat;  add the noodles to the water and cook until soft and done. Add the meat back and serve with green onions and soy sauce to taste.

Mexican cornbread

 
2 eggs                                                            1 cup cornmeal
 
1 cup creamed corn                                       1 1/2 tsp. salt
 
3 tsp. baking powder                                     1 cup shredded long horn cheese
 
1 cup cottage cheese                                     1 sm. can diced green chilies
 
2/3 cup oil
 
Combine all above except the green chili and cheese.
 
Place half the mixture in a buttered pan, then layer green chili and cheese and then place the other half of mixture on top.
 
Bake at 350 for 35 min.   
 
Note: keep refrigerated.

Oven Barbecued Chicken Legs


 
1 small onion, chopped                                       1/2 cup brown sugar
2 tbl. butter                                                          1 tsp. accent
8 oz. tom. sauce                                                   6 chicken legs
small can taco sauce
 
Brown onions in butter; add other ingredients and simmer 5 min. Place chicken in pan and pour sauce over top. Bake at 400 for 1 hour. Basting occasionally.

Knockwurst boiled dinner

 
1 can (103/4) chicken broth                                       1 pkg. Knockwurst
Peeled and cubed potato's and carrots                       1 quartered cabbage
 
Bring chicken broth to boil; add potato's and carrots and slashed knockwurst. Cover and cook for 10 minute.
Add the cabbage, 1/4 tsp. salt and 1/4 tsp. caraway seed. Cover and cook for another 10 minute.

Jello Dream whip Cake
 
Bake 1 white cake as directed; after baked poke holes in the top of cake and dissolve a box of  strawberry flavored jello (or flavor of your choice) in 2 cups hot water and pour over cake.
Frost with Dream whip and chill for at least 4 hours.

Italian Dressing (homemade)




Mix together 1 1/2 C. salad oil, 1 C. white vinegar, 1/4 C sugar, 1/2 C. finely minced onion, 3 tsp. dry basil and 3 tsp. oregano.

Will keep in the refrigerator for months. Shake well before serving.

Aunt Thyra's green beans

2# green beans                                             1 cup water
4 slices bacon                                               2 tsp. salt
2 small onions, chopped                               1/4 tsp. pepper
1/2 tsp. sugar
 
Wash and tip green beans; snap into 11/2 pieces.
Fry bacon and onions until brown in large heavy skillet. Add remaining ingredients and heat to boiling. Cover and simmer 30 min. or until tender.

Freto Casserole

 
 
 
1-2# hamburger
1  can corn (drained)
2 small cans tomato sauce
1 small can sliced olives (drained)
Garlic and onion salt to taste
1 small bag of fretos
shredded long horn cheese
 
Cook hamburger with salt and pepper and onion salt. Add the sauce and heat well.
Put a layer of the fretos, then the meat sauce then a layer of the olives and then top all with the grated cheese. If using a small casserole dish can continue to layering as directed. Bake at 350 until the cheese melts.

Baked Breaded Eggplant 

( Borrowed this one from the internet but think I would like to try it.)

1 very large eggplant, or 2 smaller ones 
1 large egg
2-3 cups (start with 2 and add more if needed) of seasoned breadcrumbs
Olive oil
Garlic Salt to taste
                  
Preheat oven to 375. Line 2 baking sheets with aluminum foil and coat each pan with olive oil (it’s easier if you spread it around with your fingers).  Peel and slice eggplant about a ¼ inch thick.  In a small bowl whisk together the egg with about a tablespoon or two of water.  Pour 2 cups of seasoned bread crumbs on a plate and set aside.  

Dip each piece of eggplant in the egg mixture and then dredge in the bread crumbs and set onto the baking sheets.  Once you’ve finished this process you will need to drizzle a little olive oil on top of each piece of eggplant.  Place in oven and cook for about a ½ hour, turning each slice of eggplant after 15 minutes.  When it's done it should be a nice golden brown, so increase your cooking time if need be. When it comes out of the oven I sprinkle a little garlic salt over all of them.  Serve hot or cold, either way it's yummy!  Serves 4.

2 onions sliced                                       5-6 cloves of garlic
4-5 # pork roast                                      1/2 cup water
 
Place onions on the bottom of crook-pot. Add meat and other ingredients. Cook on low 8-12 hrs. or overnight.
 
Remove bone and fat from meat and shred. Add 1 lg. chopped onion and 16 0z bottle B.Q. sauce. Cover and cook 1-3 hours on high or 4-8 hours on low. Stir two or three times during cooking. Serve over hamburger buns. Add more bq sauce if desired.

Chili (Gummy's)

 
2# of hamburger
1 onion chopped
2 sm. tomato sauce
2 sm. tomato paste
Chili power do taste
1 clove of garlic minced
small amount of rosemary in the palm of your hand, crumbled (this is the secret ingredient)
 
Brown hamburger and onions. Drain off fat. Add all other ingredients and simmer 45 minutes.
Serve with hot flour tortilla's

A-Z challenge Recipes Letter A

Letter A and our first recipe is for  Artichoke





This vegetable grows to 4–6 ft tall.

 
If you have never eaten one you really should give it a try.

It is pretty simple..you just cook it in boiling salted water for 20 to 25 min. or until you can pierce it with a sharp fork. Drain it and set on plate to serve. Pull the leaves off stating at the bottom. You eat only the little fleshy part at the base. Some people like to dip it in melted butter. I like it dipped in real mayoniase and some restaurants serve it with garlic aioli.
