Card

Daughter and Son-in law sent us this card the other day and thought it was so cute I would share it...
They have moved to Texas and we are going for our first visit the second week of April.

Trouble

The way I have kept the blogs I follow is that I pin them in a file and it has always worked fine but recently I have not been able to bring up some of them. It seems the difference is that some are pinned site short cut and some are internet shortcut. The later are the ones that I can't bring up. When I go direct it warns that this site is not secure. I did not change anything and tried to pin them again but it is the same. Anyone have any ideas?

The true meaning of Saint Patricks Day

A cultural and religious celebration of the death of Saint Patrick depicted here in a stained glass window at Saint Benin's Church, Ireland. He is holding the three leaved shamrock he supposedly used to explain the trinity to Irish pagans.

Tues. night dinner catch up

One night I baked a Cornish game hen
1 game hen
2 green onions, white parts only
1 glove garlic, crushed
2 Tbl. honey
1 tbl. soy sauce.
Preheat oven (toaster oven) to 350
Remove giblets and use for another time.
Wash the hens and pat dry with paper towel.
Secure wings and place the green onions and garlic in the cavity.
In a small bowl wish together the honey and soy sauce and brush over hens.
Roast basking occasionally for 1 hours. Let hens sit for 10 min. before cutting in half.
Served with Asparagus and shells from Trader Joe's and avocado slices and tom. slices.  The sauce for the chicken was really good but think it would be better to use on chicken strips where you would get more coverage.

Tuna Noodle Casserole
1 cup think egg noodles uncooked
103/4 ounce cream of mushroom soup
1 can 5 oz. tuna in water
1/4 cup frozen peas
salt and pepper to taste
1/2 cup shredded cheddar cheese
1/2 cup French's fried onions
Preheat oven (toaster oven) to 350
Boil the egg noodles in boiling water until tender and drain.
Drain the tuna and mix the tuna, mushroom soup and peas in a med bowl. Stir in the foodles and put in 2 20 oz. casserole dishes or one casserole dish. Top with cheddar cheese and bake for 25 min. Remove from oven and sprinkle with the onions and bake for another 5 min. or until the onions are brown.
I served this with steamed veg. and a Waldorf salad and it was yummy!

This past Tues. night I did a replay of this cod recipe and a new side dish recipe:
Broccoli Risotto
1/2 cup long white rice
2 tbl. chopped onion
1 clove garlic, minced
1 tbl. olive oil
3/4 cup water
1/2 cup fresh or frozen broccoli
1 tsp. instant chicken bullion granules
1/4 tsp. Italian seasoning
2 tbl. Parmesan cheese
pepper to taste
In med. saucepan cook the rice, onion and garlic in the oil for about 4 min. or until the rice is golden brown. Stir in the water, broccoli, chicken bouillon granules Italian seasoning and pepper. Bring to a boil, reduce heat and cover and simmer for 15 min. (do not lift cover). Remove from heat and stir in the parmesan cheese and let stand for 5 to 8 min.

 orange slices round it out.
