Creamy Smothered Ranch Pork Chops for Two
1 tbl. butter
1 small onion, halved and cut into 1/4" slices (hubby and I love onions and will add more next time).
2 bone-in pork chops, 3/4 inch thick.
1/8 tsp. pepper
1 cup chicken broth
1/3 cup chive & onion cream cheese spread
2 tsp. ranch salad dressing from package mix.
Heat butter over med. heat. Add onions and cook until browned and tender. Transfer to plate.
Season pork chops with pepper and add to skillet; cook over med. high heat 5 to 7 min. until browned on both sides. Remove to plate and cover with foil to keep warm.
Add chicken broth, cream cheese spread, ranch seasoning and cooked onions. Cook 3 to 4 min until bubbly and slightly thickened. Add pork chops back and cook 2 to 3 min. till heated through.
Breakfast Potatoes
1 tbl. butter
1 15-ounce can sliced potatoes, drained well
1/4 tsp garlic powder
1/4 tsp. onion powder
salt and pepper to taste.
Melt the butter in a frying pan over med. heat. Stir in the potatoes and coat with the butter. Sprinkle them with the seasoning and cook till browned.
serves 2
The other item was frozen squash from Trader Joe's which we didn't care for.

That looks awfully good to someone who has been living on Weight Watchers Cabbage Soup since Saturday. I have lost several pounds though so that makes it not so bad.
the pork chops sound really good. i make potatoes like that all the time but i have never tried canned potatoes. i like real onion in then as well, it caramelizes nicely and adds a nice flavor.
i'm surprised you didn't like the squash, everyone raves about trader joe products. i have never shopped there, so i have no experience with there products!!!

Trader Joes is int he busiest section of Nashville so I have only been a very few times, I have never like squash canned or frozen. Just does not do well or maybe I just never learned how to fix it. My Mother made squash pickle both yellow and zucchini and each were simple fantastic. I love fresh squash cooked with onions, lemon pepper and butter in the microwave. I could make a whole meal from that. Peace and Happy March.
