Zippy Zucchini
4 cups zucchini cut into chunks (about 2) 1/2 onion, sliced thin4 eggs, beaten 1 jar pimiento, drained
1/2 tsp. salt 1/8 tsp. pepper
Place zucchini and onion in a 10x6 dish; cover and microwave on high for 7 min. drain.
In a bowl mix together all other ingredients and pour over the zucchini. Mix well and cover with a paper towel. Microwave for 8-10 min. Stir and cook for another 4 min. or until the center is set.
Another delicious recipe!! I'm coming back here over the next week and copying a lot of the recipes you shared here. I know there are lots I want to make in the weeks ahead!
